Pasteurisation

Pasteurisation is a process that uses heat at a specific temperature, usually less than 100 °C, for a fixed period of time in order to kill bacteria which slows the microbial growth in food, but not to kill all micro-organisms in the food. A Pasteurisation process reduces the viable pathogens so they are unlikely to cause disease.
